The vines are cultivated using organic (Ecocert certified) and biodynamic (Biodyvin certified) methods.
Alcohol Grade: 12%
Aging/ Vinification: Traditional vinification, with temperature control. With indigenous yeasts to favor the expression of the terroir. 100% Pinot gris, 50% of which are macerated for twelve days and 50% of which are macerated for one month. Following fermentation, the wine is matured in 700 litre terracotta eggs.

The Winery: Domaine Bonnet Huteau
Domaine Bonnet-Huteau, situated in the heart of the Muscadet Sèvre et Maine appellation near the Sèvre Nantaise river, has been a family-run estate for over 150 years. Under the stewardship of passionate winemakers Jean-Jacques Bonnet and Vincent Pineau, the 40-hectare vineyard thrives on diverse soils, including orthogneiss, mica schists, amphibolite, and granite, each imparting unique minerality to their wines. The region’s temperate maritime climate, characterized by mild winters and moderate summers, fosters the cultivation of Melon de Bourgogne, the primary grape variety in their renowned Muscadet wines.
Since 2005, Bonnet-Huteau has embraced organic farming practices, achieving biodynamic certification in 2010. Their viticultural approach emphasizes soil vitality and the natural defenses of the vines, utilizing plowing, organic fertilization, and biodynamic preparations without synthetic chemicals. In the cellar, they adopt a minimal intervention philosophy, allowing indigenous yeasts to drive fermentation. Their Muscadet wines undergo maturation on the lees in underground cement vats, enhancing freshness and complexity, with select cuvées aged in 700-liter terracotta ovoid tanks to preserve fruit purity and terroir expression.
