Aging/ Vinification: Hand harvested from vines planted in white and grey marl. A 50/50 blend, the grapes are fermented as whole bunches for 10 days before being pressed off to go into barrels for nearly a year.

The prodcer: Domaine l’Octavin
Domaine de l’Octavin, located in the heart of the Jura’s Arbois region, was founded by Alice Bouvot, a talented winemaker with a diverse background that spans Bordeaux, Burgundy, Chile, and Napa Valley. Returning to her roots, Alice began with just two hectares in 2005 and has since expanded the domaine to five hectares, all farmed biodynamically with Demeter certification. Her approach to viticulture is rooted in respect for the land, working in harmony with nature and focusing on minimal intervention to let the terroir truly shine.
The vineyards benefit from the Jura’s continental climate, with cold winters and warm, sunny summers, and are planted on clay-limestone soils ideal for growing the region’s native varieties. At l’Octavin, the winemaking process is hands-off, with grapes hand-harvested and fermented with native yeasts. Alice ensures that the wines remain unfiltered, unfined, and without added sulfites, allowing the full expression of the fruit and the unique character of the Jura terroir to come through. The result is a range of wines that are pure, complex, and deeply reflective of the land, earning high praise from critics for their authenticity and distinctiveness.
