Aging/ Vinification: Grapes are fermented and aged on the lees for 8 months in fiberglass vats. No chemicals are used in the vineyards and the wine is bottled unfined and unfiltered, with no added sulfites.
Best to have it: 10-12ºC.

The Winery: Azienda Agricola Sete
Sete (Italian for “Thirst”) is a small three person crew out of the Amaseno Valley, about an hour out of Rome, set up in 2013.
Emiliano Giorgi, Arcangelo Galuppi and Martina D’alessio are endeavouring to revive old local vineyards left to rack and ruin during an economic downturn in their region. Young heads servicing old vines, making wines without any additions in the vineyard or the cellar.
