You’ll taste/smell: Made from grapes grown observing the principles of biodynamic viticulture, this forward wine has black fruit aromas punctuated with chocolate notes, meat juices, spice and a hint of leather. Brunellos are Italy’s finest so you;ll get an elegant wine, complex with extraordinary quality.

Good to have it with: One of the fixed rules of any successful pairing is “to pair great with great and simple with simple”, having said that wild boar or venison with blueberry preserve; turkey stuffed with prunes and summer or white truffle; rich and creamy risottos with liver or lamb; stewed and braised meat dishes. Don’t pair brunello with grilled meats! Not recommended because the meat tends to taste slighting bitter and carbonized at times and is therefore not well suited to the velvety feel of a Brunello.

Wine Details

Because of its characteristics, Brunello can be aged for a long time, improving as the years go by. It is not easy to determine exactly for how many years it improves. It depends on the vintage. It varies from a minimum of 10 years to around 30 years, but it can be kept for even longer. Naturally it must be kept in the right way: in a cool cellar, but above all with a constant temperature, in the dark, without noises and smells; the bottles should be laid horizontally.

Vinification/ Aging: hand selected, manual harvest. Spontaneous fermentation with pied de cuve. Maturing: 70% on 3200 L used barrels for 24 months; 30% on 500 L used tonneau for 24 months and the 100% blend on steel tanks of 5500 L for a month before bottling.
Alcohol Grade: 15%
Best to have it: 16-18ºC. We recommend you to leave the wine “breathe” at least 2 hours before serving

The Winery: Loacker Corte Pavone

The Loacker estate Corte Pavone extends across the Montalcino hillsides at around 500 meters altitude amid a delightful landscape consisting of vineyards, fields and thick Mediterranean scrub. The finest sites and soils are planted with carefully selected clones of Sangiovese for the production of Brunello. Aromatic plants and herbs such as rosemary, lavender and thyme grow among the vines in the Corte Pavone estate and these and many more characterise the aromas and flavors of the complex and deep ‘Brunello di Montalcino’ which comes from these vineyards. The crushed grapes are left to ferment slowly with temperature control and the wine is matured for four to five years in oak casks of differing sizes and origins. Finally the wine is matured in bottle for six months prior to release. The wine estate ‘Corte Pavone’ was owned by the Martini family from Montalcino from around 1940 to 1988 and was subsequently managed by the Swiss company ‘Terre Bindella’. The Rainer Loacker family acquired it in 1996 and since then it has been run according to Loacker principles with the motto ‘Philosophy with heart and soul.
