You’ll taste/smell: The medium-bodied and structured wine packs notes of bright berry fruit and the strikingly dusty, ashy notes that are considered a part of the terroir’s dark, volcanic intrigue. Mofete conveys assertive but welcoming fruit, aromas reminiscent of olives and star anise as well as floral tones like a handful of violets, and a subtle acidity that keeps things moving across the palate. This is a superb introduction to Etna Rosso.

Good to have it with: versatile with food, chicken, pork, salmon and tuna should all go well, as would a wide variety of pastas.

Wine Details

Mount Etna is a unique natural preserve named World Heritage Site by UNESCO in 2013.
The volcano is sixth on the list of the most symbolic and active volcanoes in the world.

The soils of contrada Santo Spirito are recognized by many as one of the most important wine-regions within the DOC Etna. The vines are planted in nutrient-rich, brown volcanic sands derived from the degradation of lava deposits and in the vineyards there are some more than 100 years old pre-prephylloxera vines.

Alcohol Grade: 12%
Aging/ Vinification: Contrada Santo Spirito, Passopisciaro, Mount Etna – Northern exposure. Manual harvest by the end of September. Fermentation in stainless steel tanks with selected indigenous yeasts. Malolatic fermentation fully run. Aging 50% 12 months in stainless steel tanks, 50% 12 months in oak barrels. 12 months in the bottle.

The Winery: Palmento Costanzo

palmento is an ancient winery on Etna. They can range from primitive stone fermentation vats to 18th and 19th century buildings that dot the landscape. For Mimmo and Valeria Costanzo, their winery is a labor of love through restoration, both of the historic palmento on their property, and their old-vine vineyard. Both had to be reclaimed from the elements.

In 2021, Palmento Costanzo obtained Equalitas certification as a “sustainable organization”.
Attentive to the values ​​of tradition and quality, the company aims to produce a unique excellence of its kind, letting the territory express its maximum potential in wine, through the production of manually grown organically grown vines.
