Aging/ Vinification: Cold pre-maceration for 4 days. Fermentation with indigenous yeasts and controlled temperature between 15-25 degrees. Grapes with stems 35% and destemmed 65%. Macerations between 20 and 30 days depending on plots and tanks. Gentle extractions by pumping over.
The Winery: Jiménez-Landi
Bodegas Jimenez-Landi is in Mentrida, to NE of Toledo and south of Madrid. The winery, in the DOC of Sierra de Gredos, is in Castilla-La Mancha. Though wine has been made there for centuries, it was in 1963 that Bodegas Jimenez-Landi was born.
Some years later another sort of Man of La Mancha, Daniel Gomez Jimenez-Landi was born, and since, he has helped break down wine boundaries and expectations in and around the region. Daniel (Dani) worked at the family Bodegas for about a decade, incorporating sweeping changes from farming to winemaking and leaving a strong imprint before striking out on his own. Nowadays he is internationally known with a high profile via his Commando G label and his own Daniel Gomez Jimenez-Landi wines.
Most of his work is with high altitude old vines and historic varietals: Garnacha (grenache) in particular, where he and a few others have recalibrated the grape and its potential for complexity and striking elegance.
