Wine Details – Riofavara ‘San Basilio’ Nero d’Avola
Aging/ Vinification: After manual harvesting, the grapes are destemmed and gently crushed before the must ferments in contact with the skins for up to 48 hours, following the traditional quarantuotturi method of the Val di Noto. This short maceration enhances aromatic intensity while keeping the wine fresh and precise. The wine is then softly and progressively pressed with fractioned extractions, and fermentation continues using the estate’s native yeasts, preserving the authentic character of the terroir.
