Tempranillo grapes from 30 to 50 year-old goblet trained vineyards located at an altitude between 580 and 640 metres and harvested by hand.
The grapes were stalked and vatted for 16 days at a controlled temperature of 27°C. The wine was subsequently drawn off by gravity and underwent a second spontaneous fermentation process after two weeks.
Alcohol Grade: 14.5%
Aged 24 months in medium toast oak barrels, mixing 70% American + 30% French, and clarified every six months. After spending time in the barrels, the wine needs to be clarified and go through a final settling process, which allows bottling without filtration. 24 months aging in bottle.
