Aging/ Vinification: 2,000 liters of Nebbiolo were bled and underwent a wild fermentation with native yeasts from the organic vineyard at very low temperatures. It underwent full malolactic fermentation in tanks and was bottled after two rackings.

Founded in 2015 by Mauricio Ruiz Cantú, Dominio de las Abejas is a boutique winery nestled in the Valle de Ojos Negros, Baja California. The vineyard is a pioneer in sustainable and organic winemaking in Mexico, certified by the California Certified Organic Farmers (CCOF). Set at an altitude of 2,200 feet, the estate benefits from rich, diverse soils, previously part of a marshland, which impart unique characteristics to the wines. Emphasizing natural winemaking techniques, the grapes are fermented using native yeasts, with no chemical interventions and minimal sulfites added during bottling, creating pure, expressive wines that reflect the terroir.
Mauricio Ruiz, who has also worked in Australia, Spain, and Chile, brings international expertise to this project. Complementing his vision, vineyard manager Ricardo Michel Mata, with a Master’s degree in Viticulture, oversees the estate, drawing from experience in New Zealand and South Australia. Together, they have crafted a portfolio of wines celebrated for their vibrancy and balance, with varieties such as Grenache, Nebbiolo, Cinsault, and Chardonnay taking center stage. This commitment to sustainability and minimal intervention places Dominio de las Abejas among Mexico’s top producers of clean, natural wines.
