Aging/ Vinification: Hand-picked grapes. After a 4-hour maceration each variety ferments separately in stainless steel tanks. Aging on the lees for 3 months, light filtration and minimal sulphites added before bottling.

The Winery: Tsililis Terres
Set beneath the dramatic cliffs of Meteora in central Greece, Tsililis Terres is a project deeply rooted in place. Their vineyards sit around the ancient Cave of Theopetra on schist and limestone soils, shaped by the cool breezes of the Pindus Mountains and the wide temperature swings of Thessaly’s continental climate. These conditions allow for slow, even ripening and give the wines a natural freshness and mineral edge. The estate has been organically farmed from the beginning, with thoughtful vineyard management and hand harvesting across 25 hectares of vines, some reaching 25 years of age.
The winery focuses on native varieties—Limniona, Xinomavro, Assyrtiko, and Malagousia—grown with the intent to let each parcel speak for itself. Fermentations rely on wild yeasts, with minimal intervention and low sulfites in the cellar. Winemaker Ioanna Tsilili leads the work with a clear vision: to craft wines that are expressive, textured, and quietly confident, without excess or makeup. These are honest wines—shaped by the rocky soils and a deep respect for their surroundings.
