This wine finds its home in the small town of Senegal de Palomas in San Juan del Río, which was founded in 1531; The same year in which the King of Spain Carlos V ordered every ship that traveled to New Spain to bring vineyards and olive trees for cultivation. Since then, these lands have produce high-altitude wines for Cava 57.
