You’ll taste/smell: gold color, blossom bouquet nose with mineral notes. The bubbles are fine, making up a pearl-like necklace with citrus flavors on palate. We love the light airy bubbles in this Crémant de Bourgogne as well as its fresh, lively elegance and finesse and its intense floral and fruit aromas and flavors.

Good to have it with: as an aperitif, poultry confit with pears and dried fruit, scallops, river fish. All desserts.

Best to have it: 43-47-ºF, 4-8ºC

Description

This Crémant de Bourgogne is made from the Chardonnay grape variety. The vines are situated in the south of Beaujolais on a clay-limestone soil, the soil of predilection for Chardonnay. Much of the white Beaujolais also comes from these vines.

The plots are located in the Golden Stone villages in Oingt, Légny, le Bois d’Oingt and Saint Vérand on 4 hectares.

Alcohol Grade: 12%

Vinification: Direct pressing, vinification in traditional method, slow alcoholic fermentation (3 weeks) at a low temperature 16°C in stainless steel tanks, blend of 3 vintages, low dosage 6 g/L, minimum of SO2, no chaptalization.

Aging 18 months on batten

Aging capacity: up to 10 years

Dosage: 6 g/L
