Aging/ Vinification: Fermentation with maceration on the skins for 14 days in a tub with a delicate procedure and punching down by hand. Aging in steel for a short period. In November it is bottled with the previously frozen native must to restart the fermentation in the bottle.

The dream of growing vines in the Apuan Alps suddenly seems to be able to come to fruition.
The beautiful story of Andrea Elmi and Marco Raffaelli, both of whom came out of “Viticulture and Oenology at the University of Pisa” begins with an idea:
Turning a dream into reality is not child’s play but the commitment and vision have borne fruit.
While waiting for the vineyard to go into production, they take over the “Alpi Apuane” refuge, dedicating themselves to the cultivation and processing of high-altitude products such as blackthorn, hawthorn, dog rose, blueberry, hazelnuts, chestnuts and juniper, always keeping attention on the enhancement of the territory in which they are located.
In 2013 Maestà della Formica was born in Careggine, in the territory of the Apuan Alps. This area is characterized by strong temperature changes, abundant snow in the winter months, a spring with mild sunny days and an excellent nature of the soil, an area that adapts to crops. The mountains are a strong feature in the area and were the ideal place to bet with high quality agriculture. Following a cultivation philosophy dictated by the territory, we have chosen lands that have long been uncultivated or kept as pastures, which retain their original nature, directly using the spring water to irrigate the orchards. The key word is quality, obtained through respect for nature and the desire to be solely helped in carrying out its course in the best possible way.
