Ronco Calino’s Franciacorta DOCG Brut is obtained from 80% Chardonnay and 20% Pinot Noir grapes, harvested by hand in the second decade of August, with careful selection of the bunches before soft pressing.
The fermentation takes place in stainless steel tanks at a temperature of 15-16 °C. A small part of Chardonnay (about 20%) ferments in French oak barrels. The second fermentation is carried out through the Metodo Classico dictate and the wine completes its aging on the lees for at least 30 months before disgorgement.
