You’ll taste/smell: notes of freshly cut red-apple peel mixes with a zesty, almost salty note of lemon on the nose. Although is dry it feels off-dry with a touch of beeswax and flowers; crystalline with the fine acidity of citrus fruits on the palate.

Good to have it with: oysters, sauerkraut, tripe, Japanese tempura dishes, all forms of seafood.

Best to have it: 45-50ºF, 7-10ºC

Description

Jean-Christophe Bott is heir to the family tradition dating back to 1795, when his ancestor, Jean-Martin Geyl tended his vines and made his wine. Jean-Christophe Bott has been responsible for Domaine Bott-Geyl since 1993 and he converted the vineyards to be organic in 2000 and then biodynamic in 2002.
In the vineyards he concentrates on low yields and in the cellars he oversees the vinification in the most natural and minimalist manner. The whole art is to bring together tradition and modernity, to perpetuate the vignoble for posterity and to protect its ecology.

The grapes for Bott-Geyl Riesling Les Éléments come from plots in the Alsatian municipalities of Riquewihr, Zellenberg and Ribeauvillé. It is harvested manually, and in the cellar it ferments in stainless steel tanks. Once vinified, it undergoes an ageing on lees for about 4 to 5 months, also in tanks.
