Aging/ Vinification: Grapes are harvested by hand, then fermented with native yeasts—half in stainless steel and half in neutral oak barrels (600L). The wine rests on its lees until bottling, without batonnage, to preserve freshness and add gentle texture. No new oak is used, keeping the focus on fruit and minerality.

The Winery: Domaine de Fa
Domaine de Fa is the Beaujolais project of the Graillot family—known for their Syrah in the Northern Rhône—planted on the granitic and limestone hills around Saint-Amour and Fleurie. The vineyards sit between 300 and 400 meters in elevation, benefiting from cooler temperatures and breezy exposures that keep the fruit balanced and fresh. Farming is fully organic and steadily shifting toward biodynamics, with a clear focus on soil health and vine longevity. Everything is done by hand, from pruning to harvest, with low yields and minimal inputs to let the vineyard sites speak clearly.
In the cellar, the approach is honest and low-intervention. Fermentations rely on native yeasts, and there’s no heavy oak or extraction—just gentle handling to preserve energy and texture. Whole-cluster fermentations are often used for reds, while whites are split between neutral oak and steel to keep them clean but layered. Domaine de Fa wines feel raw in the best way: vibrant, expressive, and deeply rooted in their granite-and-limestone origins. It’s a young project with old-school values—one that continues to draw attention for its precision and personality.
