You’ll taste/smell: Ribolla Gialla is an ancient indigenous variety from northern Italy, not often found elsewhere. This wine is the perfect introduction to this grape! Pecorari produces a dry, chewy white wine, youthful but still slightly nutty. Firm acidity and freshness, and a faint floral aromatic profile. On the palate, peach, citrus, and apple notes.

Good to have it with: a cheese board with salty prosciutto, some hard cheeses, and good olives

Aging/ Vinification: Fermentation is carried out in stainless steel tanks (18/20 °C). The wine remains on the fine lees for 7 months and undergoes weekly batonnage. Bottling and further aging in the bottle.

It crafts wines across three distinct lines: “Varietale”, “Altis”, and “Riserve”, featuring acclaimed selections such as “Altis Pinot Bianco” and “Kolaus Sauvignon”.
