Wine Details – Riofavara Terre Siciliane Bianco ‘Marzaiolo’
Aging/ Vinification: The grapes are hand-harvested in the last third of August and gently destemmed before undergoing a soft, gradual pressing with fractioned extraction to preserve freshness and aromatic purity. Fermentation takes place at low temperatures, with around 10% of the must left on the yeasts for approximately 60 days to add texture and complexity. The wine does not undergo malolactic fermentation and is aged briefly in stainless steel and bottle for about four months before release.
