Jean-Claude Lapalu gave up selling his grapes to the local cooperative in 1996 to start bottling his own natural wines, working with vines between 60 and 80 years old in granite-rich soils and fermenting with native yeasts to keep sulfur virtually nonexistent.

Wild raspberry, red currant, and crushed strawberry jump right out of the glass, layered with fresh damp earth, subtle white pepper, and a touch of smoky florality. On the palate, it’s light-to-medium-bodied with bright acidity, ultra-silky tannins, and a crunchy red-fruit crunch that makes it ridiculously easy to drink.
