The Wine
Esprit de Pavie comes from a great diversity of terroirs situated on the south-facing slopes of the Dordogne valley, which can be characterized by three types of soil: Sandy-gravely foothills, Clay hillsides, Clay-limestone plateau.
Alcohol Grade: 14%
Aging/ Vinification: Alcoholic fermentation begins naturally in temperature controlled tanks. After several weeks of vatting, malolactic fermentation is made in tank. The wine is aged during 15 months in barrels which have already been used once for Château Pavie and Château Monbousquet.
Best to have it: 12-18ºC

The Winery: Chateau Pavie
Château Pavie is one of the emblematic wineries of Bordeaux and St-Emilion. It’s one of four 1er Grands Crus Classés A from St-Emilion. It has an exceptional terroir: a 37-hectare plot with gravel and calcareous soils on the St. Emilion hill, facing south. The Perse family also owns the wineries: Château Pavie Decesse, Château Monbousquet, Chateau Bellevue Mondotte, Clos Lunelles.
