Aging/ Vinification: Unlike white wines, red wines are vinified with the juice, seeds and skins. Only the stalks (stalks) are removed. After pressing, the wine is put in barrels where the malolactic fermentation will take place under the same conditions as for the whites. The wine is aged 18 months in traditional barrels.
