Good to have it with: Try it with creamy or hard cheeses, seafood like oysters or shrimp, fried chicken, or salads with vinaigrette dressings. Its acidity and effervescence make it a versatile match for various flavors and textures.

Alcohol Grade: 12.5%
Aging/ Vinification: Chardonnay from a selection of young vines grown organically, planted on several parcels with predominantly clay-limestone soil. The grapes are harvested by hand, followed by direct pressing, fermentation in vats, then maturation in barrels that have seen several wines. This is a traditional method sparkling wine, with zero dosage, bottled and aged in stacks for 24 months at the estate. Sulphites used only sparingly.

The Winery: Domaine Fumey Chatelain

Fumey Chatelain is a husband and wife team – Raphael Fumey and Adeline Chatelain, who tend about 17 hectares of vineyards in the Jura subregion of Arbois.

Thirty years ago they were solely grape-growers but after the devastating frost of 1991 left them with only a tiny crop to sell they decided to make the wine themselves, and have not looked back since.

Now based in Montigny-lès-Arsures, the recent wines are predominantly the work of their globetrotting son, Marin, who has spent time at Spinifex in the Barossa among many other vintage stints around the world.

The wines are made with minimum intervention and they are in the process of organic and biodynamic certification. As they say…”respectful of the living soil we do everything possible to obtain healthy berries. Good wines are produced with great grapes.”
