The freshness associated with a beautiful minerality bursts at first glance. Then the fruitiness sets in, evoking white fruits (pear, apple) or ripe yellow fruits (apricot, peach) underlined with a hint of liquorice or even fennel, signature of the fine Pinots Noirs of the Montagne de Reims. The palate is round, smooth and lively. The texture on the palate fluctuates from fullness / vinosity to freshness / minerality (“chalky” character). The finish appears saline, giving the champagne a quality persistence. A very balanced and tasty champagne.

Ageing, Grapes are gently crushed on traditional wooden presses by parcel and settled overnight before an 8-to-10-day fermentation and full malolactic transformation. After aging for four months in enamel-lined tanks, the base wine is crafted into a secret house blend of Chardonnay, Pinot Noir, and Pinot Meunier tailored to the vintage. The Champagne undergoes secondary fermentation in the bottle, ages 48 months on the lees (combining 2009 and 2010 vintages), and is hand-riddled over six weeks before manual disgorgement.
